These chips are popular around Central and South America and are lovely alternative to potato chips. They are simple to make and lightly seasoned with salt.
Ingredients
1 Plantain
Vegetable Oil
Salt to taste
Method
Cut off each end of the plantain.
Carefully peel the plantain. If the skin does not come off easily, use a parring knife to help remove the skin.
Cut the plantain in half, approximately 4cm in length.
Using a mandoline, slice the plantains creating 2-4mm planks. Keep the slices consistent to allow frying time to remain constant.
Fill a medium-sized, high walled pot with 3-4cm of vegetable oil.
Heat the oil to a temperature of 160°C.
Fry the plantain slices for 4 minutes or until golden brown in two batches to avoid crowding the pot.
Drain onto a wire rack sitting on a baking tray.
Season immediately with salt.
